Abstract:
(EN) Dual textured swirled confections, such as gummy or jelly candies or fruit snacks are continuously produced by co-deposition into a mold. Gellable liquid components having substantially different specific gravities are swirled together to obtain a unique, non-particulated, mousse-like textured product with a swirled or marbleized appearance. The dual textured confections include a first component which is gelled and is substantially aerated and a second component which is gelled and preferably non-aerated. Both of the swirled components are distinct from each other, are present throughout the confection, and are present at the surface of the confection.
(FR) L'invention concerne des friandises à structure spiralée à double texture, telles que des bonbons à base de gelée ou de gélatine ou des friandises fruitées, produites par dépôt simultané dans un moule. Dans la présente invention, des composants liquides pouvant être gélifiés et possédant des densités relatives sensiblement différentes sont mélangés dans un mouvement rotatif pour former un produit texturé semblable à de la mousse, non particulaire, unique, présentant un aspect spiralé ou marbré. Ces friandises à double texture comprennent un premier composant qui est gélifié et sensiblement aéré et un second composant qui est gélifié et de préférence non aéré. Ces deux composants sont différents l'un de l'autre et présents à travers toute la friandise et à la surface de celle-ci.
