Abstract

A method for the production of purified proteins with controlled isoflavones content is disclosed. The method includes providing a plant material containing at least one protein, at least one sugar and at least one isoflavone in a malonyl glycoside form. The method also includes hydrolyzing at least part of the at least one isoflavone in malonyl glycoside form to generate isoflavone in glycoside or aglycones form. The method also includes solubilizing at least part of the at least one sugar to form at least one solubilized sugar. The method also includes separating the at least one solubilized sugar while at about pH less than 10 to form an isoflavone-containing purified protein stream and a sugar-containing stream. A purified protein from a soy-based starting material is also disclosed. The purified protein has a protein concentration of at least about 60 percent. The purified protein is characterized by at least one of: (1) being substantially free of isoflavones in malonyl glycoside form; (2) having a higher concentration of isoflavones content in glycoside or aglycones form relative to the soy-based starting material; (3) being substantially free of an anti-nutritional factor.

La présente invention se rapporte à un procédé de production de protéines purifiées présentant une teneur régulée en isoflavones. Ce procédé consiste à se doter d'une matière végétale contenant au moins une protéine, au moins un sucre et au moins une isoflavone sous forme de malonyl-glycoside. Ce procédé consiste également à hydrolyser au moins une partie d'au mois une isoflavone se présentant sous forme de malonyl-glycoside de manière à générer une isoflavone se présentant sous la forme de glycosides ou d'aglycones. Ce procédé consiste à également à solubiliser au moins une partie dudit ou desdits sucres de manière à former au moins un sucre solubilisé. Ce procédé consiste en outre à séparer ledit ou lesdits sucres solubilisés alors que celui-ci est à une valeur approximative de pH inférieure à 10 de manière à former un flux de protéines purifiées contenant des isoflavones et un flux contenant du sucre. L'invention se rapporte également à une protéine purifiée provenant d'une matière première à base de soja. La protéine purifiée présente une concentration protéique d'au moins 60 % environ. Cette protéine purifiée est caractérisée par au moins l'une des caractéristiques suivantes: (1) la protéine ne contient sensiblement aucune isoflavone sous forme de malonyl-glycoside; (2) la protéine présente une concentration en isoflavones sous la forme de glycosides ou d'aglycones qui est supérieure à celle de la matière première à base de soja; (3) la protéine ne contient sensiblement aucun facteur anti-nutritionnel.
