(EN)The present invention relates to a method for preparing a lupin-sourced protein-enriched preparation comprising the steps of: (a) solubilising the proteins from lupin meal using alkaline conditions, (b) precipitating the solubilised proteins, and (c) solubilising the precipitated proteins of step (b); from which lupin milk and derived products is made through (a) diluting the lupin-sourced protein-enriched preparation, and (b) blending fat, carbohydrate, and whitening ingredients to achieve desired organoleptic and nutritional qualities.
(FR)L'invention concerne un procédé permettant de produire une préparation enrichie en protéine de lupin, qui comprend les étapes suivantes : (a) solubiliser les protéines issues de farine de lupin, dans des conditions alcalines ; (b) précipiter les protéines solubilisées et (c) solubiliser les protéines précipitées à l'étape (b) ; d'où sont obtenus le lait de lupin et des produits dérivés, par (a) dilution de la préparation enrichie en protéine de lupin, et (b) mélange d'ingrédients gras, glucidiques et à effet blanchissant, afin de parvenir aux qualités organoleptiques et nutritionnelles voulues.
