Beschrieben wird ein Verfahren zur Herstellung eines instantlöslichen, sprühgetrockneten Pulvers für die Getränkeherstellung, mit folgenden Schritten: Herstellen einer Lösung, umfassend: Wasser, einen wasserlöslichen Matrixbildner und einen wasserlöslichen Emulgator und/oder Emulsionsstabilisator, Herstellen einer O/W-Emulsion durch Vermischen der hergestellten Mischung zumindest mit einer in einer wässrigen Lösung emulgierbaren Substanz, ausgewählt aus der Gruppe, die aus ätherischen Ölen, Terpenen, sensorisch neutralen Ölen, Pflanzenölen und deren Mischungen besteht und einem Beschwerungsmittel, Homogenisieren der O/W-Emulsion, Sprühtrocknen der homogenisierten O/W-Emulsion zu einem Pulver mit einer mittleren Korngrösse im Bereich zwischen 80 und 250 $g(m)m.

The invention concerns a method for producing a spray-dried soluble instant powder for producing beverages. Said method consists in: producing a solution containing water, an agent forming a water-soluble matrix and an emulsifier and/or a water-soluble emulsion stabilizer; producing an oil-in-water emulsion by combining the resulting mixture with at least one substance emulsifiable in an aqueous solution, said substance being selected from the group comprising etherified oils, terpenes, sensorially neutral oils, vegetable oils and mixtures thereof, and a pigment load; homogenizing the oil-in-water emulsion; spray-drying the homogenized oil-in-water emulsion to produce a powder having an average grain size ranging between 80 and 250 $g(m)m.

L'invention concerne un procédé de production d'une poudre instantanée soluble séchée par pulvérisation destinée à la production de boissons. Ce procédé consiste à : produire une solution comprenant de l'eau, un agent de formation de matrice soluble dans l'eau et un émulsifiant et/ou un stabilisateur d'émulsion soluble dans l'eau ; produire une émulsion huile dans eau par combinaison du mélange obtenu avec au moins une substance émulsifiable dans une solution aqueuse, cette substance étant choisie dans le groupe comprenant les huiles éthérées, les terpènes, les huiles sensoriellement neutres, les huiles végétales et des mélanges de ces substances, et une charge pigmentaire ; homogénéiser l'émulsion huile dans eau ; sécher par pulvérisation l'émulsion huile dans eau homogénéisée pour produire une poudre présentant une grosseur de grain moyenne comprise entre 80 et 250 $g(m)m.
