(EN)The isolation of at least one water soluble glycoside comprising an aromatic moiety group conjugated to mono-, di-, and trisaccharides from hop plant parts other than hop cones is disclosed. A glycoside preparation made by extraction of hop plant leaves with an aqueous alcohol was discovered to confer a pleasant grape flavor to the beer to which the glycoside preparation was added. The glycoside composition of the glycoside preparation made from aqueous alcohol-extracted hop plant leaves was found to differ from a similar preparation made from hop cones.
(FR)L'invention concerne l'isolation d'au moins un glycoside hydrosoluble contenant un groupe d'une fraction aromatique conjugué à des mono-, di- et trisaccharides tirés de parties du houblon autres que les cônes de houblon. Une préparation de glycoside obtenue par extraction de feuilles de houblon au moyen d'un alcool aqueux s'est révélée conférer un agréable arôme de raisin à la bière auquel on avait ajouté cette préparation de glycoside. La composition glycosidique de la préparation de glycoside obtenue à partir de feuilles de houblon extraites au moyen d'un alcool aqueux s'est révélée être différente d'une préparation semblable obtenue à partir de cônes de houblon.
