(EN)A packaged oil-in-water type emulsion food produced by filling an oil-in-water type emulsion food containing an edible fat, vinegar and egg yolk into an oxygen-barrier container and sealing, characterized in that the dissolved oxygen concentration immediately after the production ranges from 0.8 to 8.1% O2. The packed oil-in-water type emulsion food suffers from little deterioration in qualities due to oxidation and has a well-balanced flavor.
(FR)L'invention porte sur une émulsion alimentaire eau dans huile dans son emballage obtenue en remplissant un emballage à barrière d'oxygène d'une émulsion alimentaire eau dans huile à laquelle on a ajouté des graisses comestibles, du vinaigre, et du jaune d'oeuf, puis en le scellant. Immédiatement après l'opération, la concentration en O2 dissous va de 0,8 à 8,1%. L'émulsion alimentaire ainsi emballée ne subit que peu de détériorations qualificatives dues à l'oxydation et présente un arôme bien équilibré.
