(EN)Food products such as vinegars and vinegar containing products with distinct aromatic constituents, seasonings, fruit juices, creams, pickles, preserves and jams in general, are obtained from fruit musts by concentrating the fruit musts at a volume ranging from 0.8 and 0.1 of the initial volume, with 1.0 as the initial volume, inoculating said concentrated fruit musts with a yeast and fermenting the inoculated must before mixing the fermented must with vinegar or another base food product.
(FR)L'invention porte sur des produits alimentaires tels que des vinaigres et des produits contenant du vinaigre et différents constituants aromatiques, des assaisonnements, des jus de fruits, des crèmes, des marinades, des conserves de fruits et des marmelades, en général. On obtient ces produits alimentaires à partir de moûts de fruits en concentrant ceux-ci dans un volume compris entre 0,8 et 0,1 du volume initial, 1,0 étant le volume initial, en inoculant ces moûts de fruits concentrés avec une levure et en laissant fermenter le moût inoculé avant de mélanger le moût fermenté avec du vinaigre ou autre produit alimentaire de base.
