Abstract:
(EN) It is intended to provide novel processes for producing isomaltose and isomaltitol and use thereof. Namely, a process for producing isomaltose which comprises treating a carbohydrate having &agr;−1,4 glucoside bond as the binding manner at the non−reducing end and having a degree of glucose polymerization of 2 or more with &agr;−isomaltosyltransferase and &agr;−isomaltosyl gluco sugar synthase originating in a specific microorganism; a process for producing isomaltitol by using isomaltose obtained by the above process; carbohydrate mixtures containing isomaltose and/or isomaltitol thus obtained; and use thereof.
(FR) La présente invention concerne de nouveaux processus de production d'isomaltose et d'isomaltitol ainsi que l'utilisation de ces composés. Un processus de production d'isomaltose consiste à traiter un glucide possédant une liaison $g(a)-1,4 glucoside en guise de liaison à l'extrémité non-réductrice et possédant un degré de polymérisation de glucose d'au moins deux avec une $g(a)-isomaltosyltransférase et une de $g(a)-isomaltoglucosylsynthase issue d'un micro-organisme spécifique. Un processus de production d'isomaltitol consiste à utiliser l'isomaltose obtenue par le processus susmentionné. Cette invention concerne aussi des mélanges glucidiques contenant de l'isomaltose et/ou de l'isomaltitol ainsi obtenus et l'utilisation de ces composés.
