(EN) A process for producing a food product, comprising the steps of preparing a batter mix comprising milk protein and having a solids content of 45% or more by weight, homogenising the mix, pasteurising the mix, acidifying the mix and cooling the mix. The product can be whipped and used as cheese cake Filling.
(FR) L'invention concerne un procédé de fabrication d'un produit alimentaire, consistant d'abord à préparer un mélange à pâte lisse contenant des protéines laitières et présentant une teneur en solides de 45 % ou plus en poids, et à soumettre ensuite le mélange à des opérations successives d'homogénéisation, de pasteurisation et d'acidification. Le produit obtenu peut être battu et utilisé comme fourrage de gâteau au fromage.
