Abstract
(EN) The invention relates to a method for the production of a water-dispersible formulation containing carotenoids. The $g(b)-carotene was dissolved in n-isobutyl acetate and the hot solvent phase was dispersed in a modified water starch solution. The n-isobutyl acetate was then evaporated. The solvent traces were removed by water vapor distillation at low pressure. The dispersion was then dried. The $g(b)-carotene thus obtained is used as colorant, particularly in the food industry. It has improved characteristics in terms of stability, solubility, color transfer to polar and apolar media and possibility of compressing into tablets with reduced porosity.
(ES) Procedimiento para la producción de una formulación dispersable en agua que contiene carotenoides. El $g(b)-caroteno se disolvió en acetato de n-isobutilo, y la fase del disolvente caliente se dispersó en una disolución de almidón alimenticio en agua modificado. Después, se evaporó el acetato de n-isobutilo. Se eliminaron las trazas de disolvente mediante destilación con vapor de agua, a presión reducida. Se secó la dispersión. El $g(b)-caroteno obtenido se utiliza como colorante, particularmente en la industria alimentaria y presenta unas características mejoradas en cuanto a estabilidad, solubilidad, cesión de color a medios polares y apolares y posibilidad de compresión en tabletas de porosidad reducida.
(FR) L'invention concerne un procédé de production d'une formulation soluble dans l'eau contenant des caroténoïdes. Ce procédé consiste à dissoudre le bêta-carotène dans de l'acétate de n-isobutyle et à disperser la phase du dissolvant chaud dans une dissolution d'amidon alimentaire dans de l'eau modifiée, puis à évaporer l'acétate de n-isobutyle, à éliminer les traces de dissolvant par distillation à la vapeur d'eau, à basse pression, et à sécher la dispersion. Le bêta-carotène ainsi obtenu est utilisé comme colorant, en particulier dans l'industrie alimentaire, et présente des caractéristiques améliorées en termes de stabilité, de solubilité, de transfert de chaleur à des milieux polaires et apolaires, et en termes de possibilité de compression sous forme de comprimés à faible porosité.
