Abstract
(EN) Disclosed is a potato mash and the method for making the same. The potato mash can be used to produce food products such as mashed potatoes, potato patties, potato pancakes, and potato snacks. The potato mash can also be used to form dehydrated potato products such as flakes, flanules, granules, agglomerates, sheets, pieces, bits, flour, and particulates. The dehydrated potato products are suitable for use in a wide variety of food products, such as mashed potatoes, potato patties, potato pancakes, potato snacks, breads, gravies, and sauces. The food products made from the mash and/or from the dehydrated products produced therefrom have improved potato flavor and improved texture. Especially preferred is an improved fabricated chip.
(FR) L'invention concerne un mélange à base de pommes de terre et son procédé de fabrication. Ledit mélange peut être utilisé pour confectionner des produits alimentaires tels que de la purée, des galettes, des crêpes ou des produits de grignotage à base de pommes de terre. Ce mélange peut également servir à fabriquer des produits déshydratés à base de pommes de terre tels que flocons, flanules, granules, agglomérats, feuilles, morceaux, miettes, farine ou particules. Lesdits produits déshydratés à base de pommes de terre sont adaptés à la confection d'une grande variété de produits alimentaires tels que de la purée, des galettes, des crêpes ou des produits de grignotage à base de pommes de terre ou encore des pains, des jus ou des sauces. Les produits alimentaires confectionnés à partir de ce mélange et/ou à partir des produits déshydratés ainsi fabriqués possèdent un goût de pomme de terre et une texture améliorés. En particulier, le produit préféré est une chips fabriquée améliorée.
