(EN)A tea extract which comprises compounds responsible for the aroma and/or taste of tea, wherein the extract is soluble in water at room temperature and contains less than 30 % by weight tannins based on the dry weight of the tea extract. The tea extract is obtainable by a method comprising separating an aqueous phase (3) comprising a mixture of tea extract and one or more further components form a water immiscible hydrophobic phase (2) by means of a hydrophilic membrane (1) and allowing said tea extract to move out of the aqueous phase through the membrane and into the water immiscible hydrophobic phase.
(FR)L'invention concerne un extrait de thé comprenant des composés aromatiques et/ou gustatifs du thé. L'extrait est soluble dans l'eau à température ambiante et contient moins de 30 % en poids de tanins par rapport au poids de l'extrait de thé sec. L'extrait de thé peut être obtenu par un procédé consistant à séparer une phase aqueuse (3) comprenant un mélange d'extrait de thé et au moins un ou plusieurs constituants supplémentaires obtenus à partir d'une phase hydrophobe (2) non miscible à l'eau, grâce à une membrane hydrophile (1) et permettant à l'extrait de thé de sortir de la phase aqueuse à travers la membrane et d'entrer dans la phase hydrophobe non miscible à l'eau.
