Abstract
(EN) A novel inulin synthase having a function and a substrate specificity of acting on sucrose to form inulin but not on ketose, maltose, lactose, trehalose or cellobiose; and a process for producing inulin characterized by bringing this enzyme, a liquid culture medium of a microorganism producing this enzyme or optionally processed cultured cells thereof into contact with sucrose to thereby form inulin.
(FR) L'invention concerne une nouvelle synthase d'inuline dont le fonctionnement et le substrat ont la spécificité d'agir sur le saccharose pour donner de l'inuline mais pas sur la cétone, le maltose, le lactose, le tréhalose ni le cellobiose ; et un procédé de production d'inuline consistant à mettre cet enzyme, un milieu de culture liquide d'un micro-organisme produisant cet enzyme ou de cultures de cellules de ce dernier éventuellement traitées, en contact avec le saccharose pour ainsi obtenir de l'inuline.
