(EN)$g(a)-Isomaltosyltransferase capable of forming a cyclic tetrasaccharide having a cyclo { - 6} -$g(a)-D-glucopyranosyl- (1 - 3) -$g(a)-D-glucopyranosyl- (1 - 6) -$g(a)-D-glucopyranosyl- ( 1 - 3) -a-D-glucopyranosyl- ( 1 - ) structure via a reaction involving $g(a)-isomaltosyl transfer starting from a saccharide having an $g(a)-1,6-glucosyl bond as the bonding manner at the non-reducing end and an $g(a)-1,4-glucosyl bond as the bonding manner at the part other than the reducing end and having a degree of glucose polymerization of at least 3 is provided. Also, a microorganism producing the above enzyme, a process for producing the above enzyme, the cyclic tetrasaccharide obtained by using the above enzyme or a carbohydrate containing the same, and use thereof are established.
(FR)L'invention concerne de l'$g(a)-isomaltosyltransférase permettant de former un tetrasaccharide cyclique possédant une structure cyclo { -6} $g(a)-D-glucopyranosyl-(1-3)-$g(a)-D-glucopyranosyl-(1-6)-$g(a)-D-glucopyranosyl-(1-3)-$g(a)-D-glucopyranosyl-(1-) par l'intermédiaire d'une réaction impliquant le transfert d'$g(a)-isomaltosyle en commençant par un saccharide possédant une liaison $g(a)-1,6-glucosyle comme élément de liaison à l'extrémité non réductible et une liaison $g(a)-1,4-glucosyle comme élément de liaison à un autre endroit et présentant un degré de polymérisation du glucose d'au moins 3. L'invention concerne également un micro-organisme produisant ladite enzyme, un procédé de production de ladite enzyme, le tetrasaccharide cyclique obtenu au moyen de ladite enzyme ou un hydrate de carbone contenant celui-ci, et l'utilisation de ce procédé.
