(EN)Fermented foods having a sufficient stability and an excellent flavor as foods to be taken orally are produced by using a bifidobacterium belonging to Bifidobacterium catenulatum or Bifidobacterium pseudocatenulatum which has never been employed in foods so far. These fermented foods containing a bifidobacterium are obtained by fermenting a medium containing soybean milk as the main component by using a bifidobacterium selected from Bifidobacterium catenulatum and Bifidobacterium pseudocatenulatum.
(FR)Selon ce procédé, on produit des aliments fermentés, ayant une stabilité suffisante et un excellent parfum sous forme d'aliments pouvant être pris par voie buccale, au moyen d'un bifidobacterium appartenant à Bifidobacterium catenulatum ou Bifidobacterium pseudocatenulatum qui n'a jamais été, jusqu'à présent, utilisé dans les aliments. Ces aliments fermentés contenant un bifidobacterium sont obtenus par fermentation d'un lait de soja contenant un milieu, comme composant principal, au moyen d'un bifidobacterium sélectionné dans Bifidobacterium catenulatum et Bifidobacterium pseudocatenulatum.
