Abstract
(EN)
A dietary fiber product obtained from the Indian mulberry (Morinda citrifolia) plant and the process of extracting and purifying the fiber is disclosed. According to one embodiment, the Indian mulberry pulp is washed and separated from the juice by filtration. The wet pulp is pasteurized. The wet pulp can be further processed by drying. A high fiber products can be prepared by mixing the pulp with ingredients, such as supplemental dietary fiber, water, sweeteners, flavoring agents, coloring agents, and nutritional ingredients.

L'invention concerne un produit contenant des fibres alimentaires, obtenu de la plante de la mûre blanche indienne (Morinda citrifolia), ainsi que le procédé d'extraction et de purification des fibres. Selon un mode de réalisation, la pulpe de la mûre blanche indienne est lavée et séparée du jus par filtration. La pulpe humide est pasteurisée et peut être ensuite traitée par séchage. Un produit à teneur élevée en fibres peut être préparé en mélangeant la pulpe avec des ingrédients tels que des fibres alimentaires supplémentaires, de l'eau, des édulcorants, des agents aromatisants, des colorants, et des ingrédients nutritionnels.
