(EN)The present invention relates to the manufacture of alcohol and can be used in distilleries for producing ethanol. The aim of the inventive method is to simplify said process, to accelerate said process and to improve the quality of ethanol. According to the invention, during fermentation the wort is heated to an optimum temperature for the yeast strain used and at the same time ethanol is distilled until the end of the alcohol forming process. Such a method allows for the reduction of the output of fusel oils, of ethers and of aldehydes by an order of magnitude; the ethanol obtained corresponds to rectified alcohol. The dregs remaining after fermentation have excellent qualities as cattle feed, in addition to low humidity.
(FR)L'invention se rapporte à la fabrication d'alcool et peut s'utiliser en distillerie dans la fabrication d'éthanol; elle permet de simplifier et d'accélérer le processus de fabrication d'alcool et d'améliorer la qualité du produit final. Le procédé consiste à chauffer le moût en cours de fermentation jusqu'à une température optimale pour la race de levure utilisée et à distiller simultanément l'éthanol jusqu'à la fin du processus de formation d'alcool. Ce procédé permet de réduire d'environ un ordre de grandeur la quantité d'huiles de fusel, d'éthers et d'aldéhydes, l'éthanol obtenu correspondant à de l'alcool rectifié. La lie restant après la fermentation possède de très bonnes propriétés pour l'alimentation du bétail ainsi qu'une faible humidité.
