Abstract:
(EN) The invention concerns a method for producing a composition enabling to prepare from hot water a food product, in particular a drink blending the product taste, for instance coffee, with the taste of at least a fruit and/or at least a plant. It consists in preparing a soluble or insoluble powder of said product or of an extract thereof, a soluble powder of at least a fruit and/or at least a plant by extracting, dry-freezing and adding specific components, and in mixing the two powders or extract and powder to prepare a food product, in particular a drink. The invention also concerns the resulting product and is particularly applicable in the food industry.
(FR) Le procédé de production permet de produire une composition permettant d'élaborer à partir d'eau chaude un produit alimentaire notamment une boisson mélangeant le goût du produit par exemple du café à celui d'au moins un fruit et/ou d'au moins une plante. Il consiste à préparer: une poudre soluble ou non de ce produit ou non ou un extrait de celui-ci, une poudre soluble d'au moins un fruit et/ou d'au moins une plante par extraction, lyophilisation et addition de composants spécifiques, et à mélanger les deux poudres ou l'extrait et la poudre en vue de la préparation d'un produit alimentaire notamment d'une boisson. L'invention concerne également le produit obtenu. Elle intéresse l'industrie alimentaire.
