Abstract:
(EN) A sheet-shaped flavored film that rapidly disintegrates when placed on the surface of certain substrates and releases a natural or artificial flavor to the substrate to enhance or modify the intrinsic flavor of the substrate is provided. The flavored film includes one or more water-soluble polymers, one or more surfactants, and one or more flavoring agents. The flavored film has numerous applications in the food and food service industry wherein an easy to use, inexpensive and reproducible method of flavoring food products is desired.
(FR) On décrit une pellicule aromatisée se présentant sous forme d'hostie qui se décompose rapidement lorsqu'elle est placée sur la surface de certains substrats et qui libère un arôme naturel ou artificiel dans le substrat pour renforcer ou modifier la saveur intrinsèque dudit substrat. La pellicule aromatisée contient un ou plusieurs polymères solubles dans l'eau, un ou plusieurs tensioactifs, et un ou plusieurs agents aromatisants. Cette pellicule aromatisée peut être utilisée dans diverses applications dans le domaine alimentaire et dans l'industrie du secteur alimentaire dans laquelle on recherche un procédé permettant de parfumer ou d'aromatiser des produits alimentaires qui soit facile à utiliser, peu coûteux et reproductible.
