(EN)The invention relates to procedures for the manufacturing of D-galactose and D-galactose containing compositions. More specifically, the invention provides a method for isolating D-galactose from legume material, which method comprises subjecting a legume composition containg non-homologous soluble polysaccharide, commonly referred to as oligosaccharide, to one or more treatments, resulting in a preparation comprising at least 30 % oligosaccharides, and subsequent hydrolysis of the oligosaccharides in this preparation into mainly monosaccharides.
(FR)La présente invention concerne des procédés de préparation de D-galactose et de compositions contenant du D-galactos ;, de manière plus spécifique, il s'agit d'un procédé permettant d'isoler du D-galactose présent dans de la matière de légumineuse, ce procédé consistant à soumettre une composition de légumineuse contenant un polysaccharide soluble non homologue, communément appelé oligosaccharide, à un ou plusieurs traitements pour obtenir ainsi une préparation contenant au moins 30 % d'oligosaccharides, puis à hydrolyser les oligosaccharides de cette préparation pour obtenir principalement des monosaccharides.
