Liquid microbial starter culture that retains its initial metabolic activity during storage for extended periods of time. Such liquid starter cultures are useful in the manufacturing of food and feed products. Starter cultures of the invention include culture of lactic acid bacteria, e.g. Lactococcus species.

L'invention concerne une culture de bactéries lactiques sous forme liquide qui maintient son activité métabolique d'origine au cours du stockage prolongé. De telles cultures de levain sous forme liquide sont utiles dans la production d'aliments tant pour les hommes que pour les animaux. Ces cultures comprennent la culture de bactéries d'acide lactique, notamment l'espèce Lactococcus.
