The present invention can be used in the production of granulated fish eggs having the shape of spherical granules that comprise a semi-transparent gel-type elastic membrane as well as a coloured viscous core. The granules contain protoplasm from original fish eggs, a fatty component, whole proteins as well as a food dye. Each fish egg grain contains the starting components in the form of an ultra-micro-emulsion that further includes thinly dispersed roe films, roe films with non-conditioned eggs as well as fish milt. This product is obtained according to a method that involves preparing a mixture of the starting components and cold-processing this mixture into a micro-emulsion. The apparatus for realising this method comprises a cold micro-emulsification device preferably of the rotating-cavitating type.

Cette invention peut être utilisée dans la production d'oeufs de poissons en grains. Les oeufs de poissons ont la forme de granules sphériques qui possèdent une enveloppe élastique et semi-transparente de type gel ainsi qu'un noyau visqueux coloré. Les granules contiennent du protoplasme d'oeufs de poissons originels, un composant gras, des protéines complètes ainsi qu'un colorant alimentaire. Chaque grain des oeufs de poissons comprend les composants de départ qui se présentent sous forme d'une ultra-microémulsion dans laquelle on introduit en outre des pellicules finement dispersées de membranes ovariennes d'oeufs de poissons, des membranes ovariennes comprenant des oeufs non conditionnés, ainsi que de la laitance issue de poissons. Ce produit est obtenu selon un procédé qui consiste à préparer un mélange des composants de départ qui est ensuite mis sous forme de micro-émulsion à froid. Cette installation comprend un dispositif de mise en micro-émulsion à froid qui est de préférence de type rotatif à cavitation.
