The invention concerns a method for thermomechanical treatment of fruits, vegetables, whole or peeled, in chunks or in slices, or the peels thereof, characterised in that it comprises the following operations: applying and maintaining for a treatment time interval (tr) a high temperature combined with high pressure; following said step by sudden and very fast (instant) expansion towards a reduced pressure and recuperating the treated products and condensation products.

La présente invention concerne un procédé de traitement thermo-mécanique des fruits, légumes, entiers, pelés, en morceaux ou en tranches, ou de leurs peaux caractérisé en ce qu'il comporte les opérations suivantes: application et maintien durant un temps de traitement (tr) d'une haute température couplée à une haute pression; suivie d'une détente brusque très rapide (instantanée) vers une pression réduite et d'une récupération des produits traités et des condensats.
