(DE)Die Erfindung betrifft ein Verfahren zum qualitativen und quantitativen Nachweis von zentralnervösem Gewebe in Erzeugnissen, insbesondere in Fleischerzeugnissen, bei dem man zugesetztes Gehirn und/oder Nervengewebe durch den Gehalt an $g(g),$g(g)-Enolase in einer zu untersuchenden Probe bestimmt.
(EN)The invention relates to a method of qualitative and quantitative detection of a tissue of a central nervous system in products, especially in meat products. According to said method, the presence of added brain or nervous tissue is detected by determining the $g(g),$g(g)-enolase contents in a test sample.
