Abstract:
(EN) A method for the microwave irradiation of a vegetable to cook the same and to brown the exterior thereof includes the steps of applying a microwave activated browning agent to the surface of the vegetable; prior to irradiation, positioning a shielding means adjacent to the vegetable in a location such that, during irradiation, adjacent portions of the vegetable are shielded from microwave radiation; and irradiating the vegetable with microwave radiation to cook and brown the same.
(FR) L'invention concerne un procédé d'irradiation aux micro-ondes d'un légume, de sorte qu'il cuise et brunisse à l'extérieur. Ledit procédé consiste à appliquer un agent de brunissement activé aux micro-ondes, sur la surface du légume; avant l'irradiation, à positionner un moyen écran à proximité du légume, à un certain emplacement de sorte que, pendant l'irradiation, les parties adjacentes du légumes soient protégées de l'émission de micro-ondes; et à irradier le légume à l'aide d'une émission de micro-ondes des sorte que celui-ci cuise et brunisse.
