Abstract:
(EN) The invention comprises a method of pre-processing food prior to a main food preservation process, comprising subjecting the food to a treatment which serves to decrease the viability of any microorganisms in the food. Preferably, the treatment involves blanching the food in an acid solution or mixing an acid into the food. In a further aspect, the invention comprises a method of preserving food, comprising the steps of: (1) subjecting the food to a treatment which serves to decrease the viability of any microorganisms in the food; and (2) subjecting the food to heat in a food preservation process.
(FR) L'invention concerne un procédé de prétraitement d'aliments avant un procédé de conservation principal d'aliments, qui consiste à soumettre les aliments à un traitement qui permet de réduire la viabilité de tout micro-organisme présent dans l'aliment. Le traitement consiste, de préférence, à blanchir l'aliment dans une solution acide ou à mélanger un acide dans l'aliment.
