Abstract:
(EN) Antimicrobial combinations comprising a sorbate preservative, natamycin and a dialkyl dicarbonate at levels below the taste threshold for each of these antimicrobials but such that combination is effective against food spoilage microorganisms. These antimicrobial combinations are useful in treating beverages, especially dilute juice beverages, calcium fortified beverages, beverages containing tea solids, and beverages containing milk solids and proteins, as well as other acidified, high water activity food and beverage products such as cheese, sausage, ready-to-spread frostings, salad dressings, mayonnaise, and the like, that are susceptible to food spoilage microorganisms, including yeasts such as $i(Zygosaccharomyces bailii).
(FR) Cette invention concerne des compositions antimicrobiennes qui contiennent un conservateur à base de sorbate, de la natamycine ainsi que du bicarbonate de dialkyle. Chacun de ces agents antimicrobiens est présent dans une quantité inférieure au seuil de détection par le goût, mais suffisante pour que leur combinaison soit efficace contre les micro-organismes entraînant la détérioration des aliments. Ces combinaisons antimicrobiennes sont utiles dans le traitement de boissons et, notamment, de jus de fruits dilués, de boissons à forte teneur en calcium, de boissons contenant des solides de thé, ainsi que des boissons contenant des solides de lait et des protéines. Ces combinaisons peuvent également être utilisées pour le traitement d'autres produits de type aliments et boissons acidifiés qui possèdent une activité aqueuse élevée, comme le fromage, les saucisses, les nappages prêts à étaler, les sauces pour salades, la mayonnaise et autres, et qui sont sensibles aux micro-organismes entraînant la détérioration des aliments, y compris aux levures telles que le $i(Zygosaccharomyces bailii).
