Abstract:
(EN) A synthetic $g(b)-galactosidase enzyme which differs from naturally-occuring $g(b)-galactosidase in that said synthetic enzyme is substantially inactive when present in packaged milk, and is activated by a chemical or condition naturally present in the gastrointestinal tract of humans or during processing of the milk for example during cheese making.
(FR) L'invention concerne l'enzyme $g(b)-galactosidase synthétique qui diffère de la $g(b)-galactosidase naturelle en ce qu'elle est sensiblement inactive lorsqu'elle est présente dans du lait conditionné, et qu'elle est activée par un produit chimique ou une condition présents naturellement dans le tractus gastro-intestinal d'humains ou pendant le traitement du lait, par exemple la fabrication de fromage.
