(EN)A process for producing a food thickening agent comprises the steps of providing a starch material, mixing the starch material with a fat and solidifying the mixture to form a food thickening agent. The starch material is a dried, heat treated and/or pre-cooked starch material and the fat is selected from those fats which exhibit a steep melting curve, non-polymorphic or monomorphic fats, fats which are essentially homogeneous, and fats which do not contain significant amounts of liquid fat at about 25 °C.
(FR)L'invention porte sur un procédé de production d'agent gélifiant consistant à mélanger de l'amidon à une matière grasse et à solidifier ce mélange pour constituer un agent gélifiant alimentaire. L'amidon est un amidon séché, traité thermiquement et/ou précuit. La matière grasse est choisie parmi des graisses à courbe prononcée de température de fusion, non polymorphes ou monomorphes, sensiblement homogènes et ne contenant pas de quantité importantes de graisse liquide à 25 °C environ.
