The process is carried out in a twin-screw, self-wiping, corotating and intermeshing extruder. Filler material (1) and hydrocolloid source (2) are fed into a feeding port (5) of the extruder and mixed. Cette invention concerne une formulation et un procédé de production d'une gâterie ou d'un aliment pour animaux domestiques, auquel on a donné diverses tailles et formes, du type bandes, boulettes ou feuilles, en ajoutant un certain nombre d'ingrédients crus qui sont mélangés ou agglomérés par chauffage de manière à constituer une matrice continue qui reste flexible et non friable pour de faibles teneurs en eau comprises entre 20 et 40 %, pour une faible activité de l'eau comprise entre 0,30 et 0,65, et comportant un composé à faible température de transition vitreuse en tant qu'ingrédient principal de la matrice, ce qui rend cet aliment stable dans un environnement comportant un emballage minimum ou sans emballage, à température ambiante. Ledit mélange est comprimé au niveau de la zone (17), il traverse la filière (18), se dépose sur une bande transporteuse(22), est découpé par un organe de coupe (23) puis est emballé ou soumis à un autre façonnage.
