Abstract:
(EN) A process for producing phosphatidylserines having a side chain derived from a polybasic unsaturated fatty acid. A natural lecithin containing a fatty acid side chain derived from a polybasic unsaturated fatty acid is used as the feedstock. Phospholipase D is caused to act on the natural lecithin as a substrate in the presence of serine, whereby phosphatidylserines having a side chain derived from a polybasic unsaturated fatty acid can be easily obtained through only one reaction step.
(FR) Cette invention concerne un procédé de production de phosphatidylsérines comportant une chaîne latérale dérivée d'un acide gras non saturé polybasique. On utilise en tant que matière de base, une lécithine naturelle contenant une chaîne latérale d'acide gras dérivée d'un acide gras non saturé polybasique. En présence de sérine, la phospholipase D agit sur la lécithine naturelle en tant que substrat, ce qui permet d'obtenir facilement des phosphatidylsérines comportant une chaîne latérale dérivée d'un acide gras non saturé polybasique, et ce en une seule étape de réaction.
