Abstract:
(EN) Dual zone cooking process and apparatus are provided for cooking a wide variety of different snack food products (40) in a continuous manner, the apparatus being arranged in modular form for conversion from one cooking process to another. Products (40) are cooked either in two tandem but separate cook zones (I-12, I-13) or in a final cook zone at cook times and temperatures applicable for the particular products. Oil volumes are variable in the cooking apparatus.
(FR) La présente invention a pour objet un procédé et un appareil de cuisson à deux zones, qui permet de cuire en continu une grande variété de produits alimentaires différents, de type snack (40). L'appareil est de forme modulaire pour permettre de passer d'un processus de cuisson à un autre. Les produits (40) sont cuits soit en tandem, mais avec des zones de cuisson séparés (I-12, I-13), soit dans une zone de cuisson finale, avec des temps et des températures de cuisson propres à chaque produit. Les quantités d'huile utilisées avec cet appareil de cuisson sont variables.
