Abstract

Inulins are pyrolyzed to di-D-fructose dianhydrides in good yield by heating at atmospheric pressure to a temperature sufficiently high to melt the inulin, or pyrolyzing in the presence of a hydroxy carboxylic acid such as citric acid, to melt temperatures of the mixture. The pyrolized inulins are used in foodstuffs to increase the relative proportions of bifido bacteria in the digestive tracts of humans and domesticated animals.

On soumet des inulines à une pyrolyse afin d'obtenir des dianhydrides de di-D-fructose à un rendement élevé par chauffage à la pression atmosphérique à une température suffisamment élevée pour faire fondre l'inuline, ou par pyrolyse en présence d'un acide hydroxycarboxylique tel que l'acide citrique, aux températures de fusion du mélange. On utilise les inulines pyrolysées dans des produits alimentaires afin d'augmenter les proportions relatives de bactéries bifido dans les voies digestives de l'homme et d'animaux domestiques.
