Abstract

An improved frozen dessert made without sucrose or corn syrup solids is provided that employs lactitol and hydrogenated starch hydrolysates as the bulk sweeteners. Aspartame, acesulfame K or other artificial sweeteners may be used as an intense sweetener. The formulation provides a taste and texture qualities that are at least as preferable as conventional products sweetened with sucrose and corn syrup solids and further provides hardness, melting and overrun properties that compare favorably with conventional products sweetened with sucrose and corn syrup solids.

L'invention concerne un dessert surgelé amélioré, préparé sans saccharose ni sirops de glucose déshydratés, pour lequel les édulcorants utilisés sont du lactilol et des hydrolysats d'amidon hydrogénés. L'aspartame, l'acésulfame-K ou autres édulcorants artificiels peuvent être utilisés comme édulcorants puissants. La formulation présente, en termes de goût et de texture, des qualités au moins aussi avantageuses que celles de produits classiques édulcorés avec de la saccharose et des sirops de glucose déshydratés. Ladite formulation présente en outre des caractéristiques de dureté, de fusion et de foisonnement qui rivalisent de ce fait avantageusement avec celles des produits traditionnels édulcorés avec de la saccharose et des sirops de glucose déshydratés.
