(EN)Starch and a minor amount of natural gum additive are processed together so that the polysaccharide components of each substance are completely dissolved in water, and the resulting blend is recovered. Upon drying, the blend produces a product which hydrates rapidly and which yields dispersions that are not only smooth and viscous, but also possess considerable lubricity. These products are useful in foods as thickening agents, suspending agents, and fat substitutes.
(FR)De l'amidon et une petite quantité d'additif sous forme de gomme naturelle sont traités ensemble si bien que les composants polysaccharides de chaque substance sont complètement dissous dans l'eau. On récupère le mélange qui en résulte et, après séchage dudit mélange, on obtient un produit qui s'hydrate rapidement et qui produit des dispersions qui sont non seulement lisses et visqueuses mais qui possèdent également un pouvoir lubrifiant considérable. Lesdits produits sont utiles dans des produits alimentaires comme agents épaississants, agents de suspension et succédanés de graisse.
