Abstract:
(EN) The invention concerns ready-to-use glazing agents with the composition: 1-25 wt.% of liquid oil; 5-15 wt.% of casein or its salts; 0.05-10 wt.% of emulsifier; 0.1-8.0 wt.% of a compound giving a browning, preferably by a Maillard-type of reaction; balance: water. The composition is sterilizable and has a shelf-life after sterilization of more than 3 months.
(FR) L'invention se rapporte à des agents de glaçage prêts-à-l'emploi, présentant la composition suivante: 1-25 % en poids d'huile liquide; 5-15 % en poids de caséine ou de ses sels; 0,05-10 % en poids d'un émulsifiant; 0,1-8,0 % en poids d'un composé brunissant, agissant de préférence par une réaction du type Maillard, le reste étant composé d'eau. La composition est stérilisable et présente une durée de conservation supérieure à 3 mois, suivant la stérilisation.
