Disclosed is a method of reducing the allergenicity of psyllium seed husks and psyllium seed husk-containing food additives. The method comprises subjecting ground psyllium seed husks to a wet heat treatment for a time and at a temperature and pressure sufficient to reduce the allergenicity of the psyllium seed husks. Psyllium seed husks alone can be subjected to the wet heat treatment to reduce its allergenicity and subsequently used as an ingredient to produce a psyllium-containing food additive or food product. Alternatively, psyllium seed husks can be mixed with one or more other ingredients of a food additive or food product and then subjected to the wet heat treatment during production of the food additive or food product.

L'invention concerne un procédé de réduction de l'allergénicité des glumes de graines de psyllium et des additifs alimentaires contenant ces glumes de graines de psyllium. Le procédé consiste à soumettre des glumes de graines de psyllium moulues à un traitement thermique par voie humide pendant une durée et à une température suffisantes pour réduire l'allergénicité des glumes des graines de psyllium. Les glumes des graines de psyllium seules peuvent être soumises au traitement thermique par voie humide afin de réduire leur allergénicité et peuvent être utilisées par la suite comme ingrédient pour produire un additif alimentaire contenant du psyllium ou un produit alimentaire. Dans un autre mode de réalisation, les glumes des graines de psyllium peuvent être mélangées à un ou plusieurs des autres ingrédients d'un additif alimentaire, ou d'un produit alimentaire et peuvent être ensuite soumises au traitement thermique par voie humide lors de la production d'additifs alimentaires ou de produits alimentaires.
