A radiant baffle assembly for gas-fired outdoor grills wherein food mounted on a spit (108) in a cooking zone is cooked from the side by a vertically extending baffle structure (10) which is heated to radiant temperatures by its contact with combustion gases and radiant energy provided by burning gaseous fuel from a horizontal gas burner (91). A forwardly facing surface of the baffle structure radiates heat transversely toward a side of the cooking zone, while an upper portion (24) of this surface directs rising combustion gases transversely toward the same side of the cooking zone. The baffle structure may include a baffle member (20) having ridges (21) and grooves (23) in a lower portion (22) for enhancing heating of the baffle structure and its radiation of heat energy.

Ensemble déflecteur à rayonnement s'utilisant dans des grils de cuisson à gaz utilisés à l'extérieur, dans lesquels le produit alimentaire monté sur une broche (108) située dans une zone de cuisson, est cuit latéralement par une structure de déflexion s'étendant verticalement (10), qui est réchauffée jusqu'à des températures de rayonnement par l'intermédiaire de son contact avec des gaz de combustion et avec de l'énergie de rayonnement produite par un combustible gazeux provenant d'un brûleur à gaz horizontal (91). Une surface de la structure de déflexion tournée vers l'avant irradie de la chaleur transversalement vers un côté de la zone de cuisson, tandis qu'une partie supérieure (24) de ladite surface dirige les gaz de combustion ascendants transversalement vers le même côté de la zone de cuisson. La structure de déflexion peut comprendre un élément déflecteur (20) pourvu d'arêtes (21) et de gorges (23) situées dans une partie inférieure (22), afin d'amplifier le réchauffement de la structure de déflexion et son rayonnement d'énergie thermique.
