(EN)The present invention relates to compositions and methods for inhibiting nonenzymatic cross-linking (protein aging). Accordingly, a composition is disclosed which comprises an agent capable of inhibiting the formation of advanced glycosylation end products of target proteins by reacting with the carbonyl moiety of the early glycosylation product of such target proteins formed by their initial glycosylation. The method comprises contacting the target protein with the composition. Both industrial and therapeutic applications for the invention are envisioned, as food spoilage and animal protein aging can be treated.
(FR)L'invention se rapporte à des compositions et à des procédés servant à inhiber les phénomènes de réticulation non enzymatique (vieillissement des protéines). A cet effet on utilise une composition qui comprend un agent capable d'empêcher la glycosylation avancée des protéines cibles, inhibant ainsi la formation des produits finaux de cette glycosylation, en réagissant avec la fraction carbonyle du produit de la glycosylation précoce de ces protéines cibles formé par leur glycosylation initiale. Ce procédé consiste à mettre la protéine cible en contact avec la composition. Des applications aussi bien industrielles que thérapeutiques de cette invention sont envisagées, parmi lesquelles on peut citer le traitement contre l'altération des aliments et le vieillissement des protéines animales.
