Abstract:
(EN) Food may be packaged and preserved for extended periods using intelligent polymers formed into food containers which have specific and variable gas permeabilities. The polymers used in forming the food packages are intelligent in that they have permeabilities which may be radically and reversibly changed by relatively small changes in temperature. By using different types and formulations of polymers and various temperatures, it is possible to create an environment within the food package which adjusts to the respiration of the food so as to best preserve the color, quality and/or shelf life of the food. The polymers are side-chain crystallisable polymers designed and formulated so as to provide a material which is substantially impermeable to a gas such as oxygen, carbon dioxide or water vapor at a temperature below a give phase transition point and permeable to the same gas at a temperature above that point.
(FR) On peut conditionner et préserver des produits alimentaires pendant de longues durées, en utilisant des polymères intelligents constitués en articles de conditionnement alimentaire pourvus de perméabilités aux gaz spécifiques et variables. Les polymères utilisés pour constituer les articles de conditionnement alimentaire sont dits intelligents, parce qu'ils possèdent des degrés de perméabilité pouvant se modifier radicalement et de manière réversible sous l'influence de changements de température relativement faibles. En utilisant différents types et formules de polymères, ainsi que différentes températures, il est possible de créer à l'intérieur de l'article de conditionnement, un environnement se conformant à la respiration du produit alimentaire, afin de préserver de façon optimum la couleur, la qualité et/ou la durée de conservation du produit. Les polymères sont des polymères cristallisables, à chaîne latérale, conçus et formulés pour réaliser un matériau pratiquement imperméable à des gaz tels que l'oxygène, le gaz carbonique ou la vapeur d'eau, à une température située au-dessous d'un point de transition de phase donné et perméable aux mêmes gaz à une température située au-dessus de ce point.
