Abstract:
(EN) Disclosed is a premix and a complete mix for preparing bakery products suitable for microwave heating. The premix includes protein in an amount of 4.5 to 25.0 by weight and 7 to 50 shortening by weight. The premix may be combined with other ingredients to prepare a mix for preparing the bakery product. The mix may include from 46 to 80 parts flour, 4 to 22 parts shortening, and 4 to 11 parts protein material.
(FR) On décrit un prémélange et un mélange complet destinés à la préparation d'articles de boulangerie utilisables dans un four à micro-ondes. Le prémélange comprend des protéines selon une quantité de 4,5 à 25,0 en poids et de 7 à 50 de graisse de cuisine en poids. On peut combiner le prémélange aux autres ingrédients afin d'obtenir un mélange destiné à la préparation d'un article de boulangerie. Le mélange peut comprendre de 46 à 80 parties en farine, de 4 à 22 parties en graisse de cuisine, et de 4 à 11 parties en matériau protéique.
