Abstract:
(EN) A method for preparing a food grade, insoluble bulking agent from starch is disclosed. The method involves a retrogradation process followed by enzymatic hydrolysis to form a modified starch product which can be used as a filler or as a bulking or texturizing agent in low-fat food formulations.
(FR) Est décrit un procédé de préparation d'un agent gonflant insoluble, de qualité alimentaire, à partir d'amidon. Le procédé met en ÷uvre un processus de rétrogradation suivi par une hydrolyse enzymatique afin de former un produit d'amidon modifié pouvant être utilisé comme matière de remplissage ou comme agent gonflant ou texturant dans des formulations d'aliments à faible teneur en matières grasses.
