Abstract:
(EN) The invention relates to hard candy, the sweetener of which consists of 30 to 70 % by weight of xylitol and 70 to 30 % by weight of sorbitol, maltitol, isomalt, lactitol, or a mixture thereof, and which can contain, in addition to the sweetener, up to 3 % by weight, preferably no more than 1 % by weight, of water, and up to 3 % of conventional processing agents and additives such as vegetable fat, emulsifiers, colourings and aromatic substances, and intensive sweeteners. A further object of the invention is a process for manufacturing said hard candy, wherein about 35 to 80 % by weight of the total amount of the sweetener is melted at a temperature of 120 to 175 °C, whereafter it is cooled to 95 to 135 °C, at which temperature the remainder of the sweetener is added thereto while mixing as a crystalline or powdered solid, optional processing agents and additives are added to the mass when it is in a molten state, and the mass is formed into candies by known forming techniques or modifications thereof.
(FR) On décrit des bonbons durs, dont l'édulcorant comprend de 30 à 70 % en poids de xylitol et de 70 à 30 % en poids de sorbitol, maltitol, isomalt, lactitol ou un mélange de ceux-ci, et qui peuvent contenir, en sus de l'édulcorant, jusqu'à 3 % en poids, et depréférence pas plus de 1 % en poids, d'eau, et jusqu'à 3 % en poids d'agents de traitement et d'additifs traditionnels tels que la graisse végétale, les émulsifiants, les colorants et les substances aromatiques, et les édulcorants intensifs. On décrit également un procédé de fabrication desdits bonbons, selon lequel environ 35 à 80 % en poids de la quantité totale d'éculcorant est fondue à une température comprise entre 120 et 175 °C, après quoi on la refroidit jusqu'à une température comprise entre 95 et 135 °C, à laquelle température l'on ajoute le reste de l'édulcorant sous forme de solide cristallin ou pulvérulent pendant le mélangeage. On peut éventuellement ajouter des agents de traitement et des additifs à la masse lorsqu'elle se trouve dans un état fondu, et l'on donne à la masse la forme de bonbons au moyen de procédés de formage connus ou de modifications de ceux-ci.
