Abstract:
(EN) A method for the production of yeast extract is disclosed wherein yeast cells are initially autoclaved in the presence of an alkaline solution. The residual alkali extracted material is then extracted with an acid. The acid extracted residue is then washed with ethanol. This method of producing yeast extract can be executed in a much shorter time period than previously known methods, generally in approximately eight hours. The method yields a glucan product which is substantially free of protein and which is a potent stimulator of macrophage activity.
(FR) Procédé de production d'extrait de levure selon laquelle les cellules de levure sont tout d'abord passées à l'autoclave en présence d'une solution alcaline. On extrait ensuite le matériau résiduel provenant des alcalis à l'aide d'un acide. On lave le résidu acide extrait à l'aide d'éthanol. On peut exécuter ce procédé de production de l'extrait de levure dans une période de temps beaucoup plus courte que celles des autres procédés connus, soit en général environ huit heures. Le procédé fournit un produit de glucan ne contenant pas de protéines et qui est un stimulateur puissant de l'activité des macrophages.
