Abstract:
(EN) Enzymatic modification of fats and oils results in a food-grade product that can be used as an emulsifier and/or fat replacer in foods. The modified oil is a mixture of mono-, di- and triglycerides having emulsification properties which can be added to commercial food preparations to replace all or part of the oil or fat in the food preparation.
(FR) La modification enzymatique de matières grasses et d'huiles a pour résultat un produit de qualité alimentaire pouvant être utilisé comme émulsifiant et/ou agent de remplacement de matière grasse dans des aliments. L'huile modifiée est un mélange de mono, di et triglycérides présentant des propriétés d'émulsionnement, et pouvant être ajustés à des préparations alimentaires afin de remplacer tout ou partie de l'huile ou de la matière grasse se trouvant dans la préparation alimentaire.
