Abstract:
(EN) Process for enhancing the natural bile acid binding capacity of edible pulp material by either heating an aqueous slurry of the pulp material to at least 40 °C and/or sequentially reacting pulp with a first reactant, such as sodium hydroxide, for activating the pendant hydroxyl groups on the polysaccharide components of the pulp material, a second reactant, such as chloroacetic acid, for carboxylating the activated pendant groups on the polysaccharide s, and a third reactant, such as calcium hydroxide, for providing calcium ions which can ionically bond to the carboxylated pendant groups.
(FR) Procédé améliorant la capacité naturelle de liaison d'acides biliaires, de matière de pulpe comestible, soit par chauffage d'un coulis aqueux de la matière de pulpe à au moins 40 °C et/ou par réaction séquentielle la pulpe avec un premier réactif, tel que de l'hydroxide de sodium, afin d'activer les groupes hydroxyle pendants se trouvant dans les constituants polysaccharides de la matière de pulpe, et un second réactif tel que de l'acide chloroacétique, destiné à carboxyler les groupes pendants activés se trouvant sur les polysaccharides, ainsi qu'un troisième réactif, tel que de l'hydroxide de calcium, destiné à produire des ions calcium pouvant se lier de manière ionique aux groupes pendants carboxylés.
