Abstract:
(EN) The present invention relates to a process for the removal of cholesterol from a processed or unprocessed dairy product (10), which process comprises: (a) obtaining a processed or unprocessed dairy product containing cholesterol; (b) contacting the dairy product at a temperature of between about 35 and 80 °C with an amount of saponin effective to bind up to 90 % of the cholesterol present in the dairy product (12); (c) contacting a temperature of between about 35 and 80 °C the cholesterol: saponin with an effective amount of diatomaceous earth (13); (d) separating the insoluble cholesterol: saponin/diatomaceous earth by filtration or centrifugation (16); and (e) recovering the dairy product having a reduced content of cholesterol (17). The process particularly useful wherein the dairy product is selected from raw milk, pasteurized milk, raw cream, pasteurized cream, butteroil or anhydrous fat. The dairy product having a lowered cholesterol level is useful as a food to restrict cholesterol intake in a human being.
(FR) Procédé d'élimination du cholestérol d'un produit laitier (10) traité ou non traité, comprenant les étapes consistant (a) à obtenir un produit laitier traité ou non traité contenant du cholestérol; (b) à mettre en contact le produit laitier à une température située entre environ 35 et 80 °C, avec une quantité de saponine efficace pour lier jusqu'à 90 % du cholestérol présent dans le produit laitier (12); (c) à mettre en contact à une température comprise entre environ 35 et 90 °C le cholestérol: la saponine avec une quantité efficace d'une diatomite (13); (d) à séparer le cholestérol insoluble: la saponine/diatomite par filtrage ou centrifugation (16); et (e) à récupérer le produit laitier ayant une teneur réduite en cholestérol (17). Le procédé est particulièrement utile lorsque le produit laitier est sélectionné à partir de lait brut, de lait pasteurisé, de crême brute, de crême pasteurisée, de matière grasse de beurre fondu et clarifié ou de matière grasse anhydre. Le produit laitier présentant un niveau de cholestérol abaissé est utile en tant qu'aliment, afin de restreindre l'absorpttion de cholestérol d'un individu.
