The present invention discloses that the water permeability across the surface membrane of harvested fruits and vegetables can be substantially increased by treating such surfaces with a degradation enzyme. The resulting products are not only more easily dehydrated but can be used to incorporate desirable substances into the interior of the treated fruit or vegetable, such as sweeteners, stabilizers, preservatives, flavor enhancers, etc.

L'invention prévoit que l'on peut améliorer la perméabilité à l'eau de la membrane de surface de fruits et de légumes récoltés, par traitement desdites surfaces à l'aide d'une enzyme de dégradation. Les produits ainsi obtenus sont non seulement déshydratés plus facilement, mais peuvent être utilisés pour incorporer des substances désirables à l'intérieur du fruit ou du légume traité, tels que des édulcorants, des stabilisants, des conservateurs, ainsi que des exhausteurs d'arôme, etc.
