Abstract:
(EN) This invention refers to yeasts obtained by fusion of spheroplasts capable of maintaining in a single genotype the demalifying trait of a $i(Schizosaccharomyces pombe) parental strain and the growth rate of the parental strain $i(Saccharomyces cerevisiae), 3 new yeasts obtained from protoplast fusion between the fusion product initially obtained (MB7TC$g(a)) and the parental strain, and two other $i(Saccharomyces cerevisiae) yeasts, and the use of these yeasts for obtaining demalification of acid wines.
(FR) La présente invention se rapporte à des levures obtenues par fusion de sphéroplastes capables de maintenir dans un seul génotype le caractère de démalification d'une souche mère de $i(Schizosaccharomyces pombe) et la vitesse de croissance des $i(Saccharomyces cerevisiae) de la souche mère; à 3 nouvelles levures obtenues par fusion protoplastique entre le produit de fusion initialement obtenu (MB7TC$g(a)) et la souche mère; et à deux autres levures de $i(Saccharomyces cerevisiae); ainsi qu'à l'utilisation de ces levures pour obtenir la démalification des vins acides.
