A precursor base for use in a bakery dough product comprising an acidic concentrate, at least one type of sugar, yeast, at least one type of flour, non-fat dry milk and at least one type of lactic acid producing bacteria and a process for producing the precursor base are disclosed. The precursor base is useful in a process for producing a precursor slurry (or active ferment concentrate) for use in making a preferment dough mixture for the preparation of the bakery dough product. In addition, processes for preparing the precursor slurry and the preferment dough mixture and an apparatus for producing the preferment dough mixture are disclosed.

L'invention concerne une base faisant office de précurseur utilisée dans un produit de pâte de boulangerie comprenant un concentré acide, au moins un type de sucre, de la levure, au moins un type de farine, du lait sec sans matière grasse ainsi qu'au moins un type de bactéries produisant de l'acide lactique. Ladite base de précurseur est utile dans une technique de production d'une boue faisant office de précurseur (ou un concentré de ferment actif), utilisée dans un mélange de pâte de préferment pour la préparation du produit de pâte de boulangerie. De plus, l'invention concerne des techniques de préparation de la boue faisant office de précurseur ainsi que du mélange de pâte de préferment, et un appareil pour produire ce dernier.
